Anpassung Essens-TN+-Zeiten

 

  • Eingang Info von Rezeption über reale Zahl der angereisten TN einer Gruppe/einer Maßnahme
  • Abgleich mit Planzahlen und Korrektur des Ressourcenplans (?)
  • Ggf. Anpassung des Einkaufs für Folgetag
  • Rückmeldung über erfolgte Korrektur und ggf. für Gast kostenrelevante Festlegungen an Rezeption
  • Bestätigung Essenszeiten mit Rezeption
  • Essenszeiten nach Gruppenstärke einteilen (max. 40 Personen, im 15 Minutenabstand bei gleicher Gruppe, sonst 30 Minuten)
  • Prüfen von Besonderheiten (Allergien, Vegetarisch, etc.) eingetragen sind

 

  • Tagesstatus Hausmanager
  • Einkaufs-/Bestelliste
  • TN-Zahl
  • Wareneinsatzvorgaben
  • Rezepturen

 

Bedarfsgerechter Vorrat an Waren/Rohstoffen

  • TN-Zahlen und-Besonderheiten nicht bekannt oder nicht kommuniziert,
  • Essenszeiten nicht bekannt oder kommuniziert,
  • Essenszeiten werden durch Gruppen nicht eingehalten
  • oftmals Besonder-heiten von Allergien, Vegetarier, etc. nicht eingetragen
